this is what you do while waiting patiently for a baby...

i thought maybe my next post would be about baby news...but we're not quite that lucky...this baby is teaching us (and many others) a lesson in patience!!!!

so this is what i do while waiting for baby:
- baby's room is painted
- baby's room decor is sewn and other pieces waiting for final "gender" touches
- a walk every day
- time spent with the animals
- the odd trip to town (lunch with family, visit to our new toy store - check it out here, shopping for odd & ends & groceries (have to have the fridge somewhat stocked!)
- baking and cooking and trying new recipes!





 the other day i heard "pitter patter" to discover the kittens running and playing on the roof!




 rhubarb crisp (not a new recipe, just wanting to use my rhubarb up)


roasted red pepper hummus


last week when dana was here (helping me paint - thanks btw!), i bought a 16 oz container of roasted red pepper hummus. by the first night, it was 3/4 gone (eaten btw the 3 of us!)

i told curt i would try to make some since he seemed to like it so much!
the other day, he comes home for lunch, gets out the rice crackers and looks for my hummus...i told him i hadn't made it yet and i think he was a little disappointed! so yesterday i got busy and it turned out quite nice!

roasted red pepper hummus...a delicious (and might i add, HEALTHY snack enjoyed with rice crackers!)

1 can (19 oz) chick peas (drained, rinsed, and skinned - taking the skins off is time consuming, but worth it because the hummus is very smooth as a result)
1 jar Unico flame roasted red peppers (i only used half a jar tho)
1/2 cup sour cream
1-2 garlic cloves, chopped
1/4 tsp pepper
1/4 tsp salt
juice of lemon

skin chickpeas and place all ingredients in a food processor or blender and blend until smooth!

makes approx 2 cups

serve with rice crackers (or whatever you want!)
