a hard and sad good-bye...

the other day we had an accident...we took the dogs for a run...
there was a gunshot, a dog who cowered under the truck. we didn't know it.
we took off, there was a thump, yelp and worried looks on our faces.
he seemed fine, he could walk. no broken bones, but we knew he was hurt. we thought he was just in pain. little did we know he was walking and alive because of adrenaline. an hour later or so i found him. not breathing. gone.

it was hard for me to take. that night as i watched curt take him away, i burst into tears. i will never forget the look on thomas's face as i cried.

so long, good friend. you will be missed around here.

here is a tried and true pasta recipe and a new recipe i tried just tonight.

CHEESE & HERB CANNELLONI

What You'll Need:
12 Catelli Express Cannelloni
1 tbsp olive oil
1 small carrot, grated
1 small onion, finely chopped
1/3 cup finely chopped fresh parsley or basil
salt and freshly ground pepper
1 1/3 cups ricotta or cottage cheese
1 egg, beaten
1 jar (700 mL) pasta sauce
1 cup water

What To Do:
- in saucepan, heat oil; cook carrot, onion and parsley until tender. season to taste with salt and pepper.
- combine cheese, egg and carrot mixture.
- combine sauce and water.
- spread half of the sauce mixture in a 9x13 baking dish. fill cannelloni with cheese mixture and place on sauce in dish. cover with remaining sauce.
- cover and bake at 350 degrees 45-40 minutes or until tender.



BAKED PEROGY CASSEROLE

16 to 20 frozen cheddar perogies
1 tbsp butter or margarine
1 onion, chopped
1/2 cup finely chopped bacon (optional)
1-10 oz can cream of mushroom soup
1-10 oz can of milk or water
salt and pepper
grated cheddar cheese

- layer the bottom of a greased 9x13 pan with frozen perogies.
- saute the onion and bacon (if desired) in a skillet and pour over the perogies.
- combine the soup and milk or water and pour over the perogy/onion mixture.
- season with salt and pepper.
- top with grated cheddar cheese and bake at 350 degrees for 45 minutes.

** I didn't have bacon, so I just used slices of sausage and it tasted just wonderful. Another idea is to serve with a baked ham or add chopped ham (instead of bacon) to the casserole. **

our changing boy - April 2012

life with Thomas keeps us hopping...this is such a cute and interesting stage!

he makes funny faces, scrunches up his nose, mimics certain actions done by us, spits to make sounds, loves to clap and do pattycake, turns his head (and whole body) sideways to see something, turns his tongue sideways (think that's a dunnington trait because i can't do it!!!), giggles lots, pulls his socks off all the time...the list goes on and on!!! some of these things he has been doing for awhile, others he's just starting! he's also starting to think about crawling...so that's fun for us!

road trip

On Friday, March 30th, Thomas and I took a trip. We planned on being away for 10 days, hoping Daddy could be with us both wknds. Well we were lucky to have him for the first part: in S'toon.

Saskatoon - to celebrate March & April birthdays on the Malcolm side (Mar. 30 - Apr. 2)
then off to Melfort - to spend time with Janaya & family (Apr. 2-6)
then off to Naicam - to spend Easter wknd and celebrate Doug's 60th birthday with the Dunnington side (Apr. 6-8)
