I found this idea on Pinterest but there was not a proper recipe included, just pictures! So I figured I'd make these for a gathering but just have to wing it!
I had made Boston cream cake for Curt's 30th birthday so went with a recipe similar to that!
What you need:
Cupcakes made from yellow cake mix (24)
1 pkg JELL-O vanilla instant pudding
1.5 cups milk
Cool whip, optional (I used some but don't think you need it)
For glaze:
2 squares BAKER's unsweetened chocolate
2 tbsp butter
4 tbsp milk
1 to 1 1/2 cups powdered sugar
Make the filling using the pudding mix and 1.5 cups milk. Beat with a whisk for 2 min. Stir in the cool whip and let stand for 5 min or set aside in the fridge.
Once cupcakes are made and cooled, cut out a funnel and cut the excess cake away. I should have taken my own pics but will include the picture from Pinterest. Fill funnels with pudding mix and put cake top back on.
Meanwhile, melt chocolate and butter in the microwave. Stir until melted. Add powdered sugar and 4 tbsp milk. Mix together until you have a nice glaze.
Spoon over filled and topped cupcakes or spread if needed.
Refrigerate for at least an hour and enjoy!
(When I made these I only used half of what I have posted for the glaze but had to make more so that is why I have the glaze doubled, might be too much but better than not enough! ;) )
